Jalfrezi is a stir-fried curry popular throughout the subcontinent and beyond. Jalfrezi means "hot fry".It consists of the main ingredient as meat and vegetables and is served in a thick spicy sauce that includes green peppers. Other common ingredients include capsicum, onions, and tomatoes.

How to make Chicken Jalfrezi:


Make chicken yakhni. Cut vegetables in cubes, sauté onion add capsicum, then add green chillies cut in julienne and add tomatoes. After that add spices, then add chicken and chicken broth, add corn flour and in the end add beaten eggs. 

What makes Chicken Jalfrezi delicious:

Chicken Jalfrezi with gravy gives a great taste to the dish. Without gravy Jalferazi is different but with gravy, it has a unique taste. 

Variations:

Chicken Jalfrezi can be served with Chinese rice, simple white rice, and egg-fried rice.

Do and don't:

  • Sauté the onions until they turn white, not pink. 
  • Do not overcook vegetables. 
  • Make a mixture of cornstarch with water and when adding to chicken broth, stirring constantly. 
  • Don't make the gravy too thick or it will be watery when cold.  
  • With fewer oil recipes didn't turn out well.

Ingredients:

  • 1/2 kg boneless chicken
  • 2 capsicum
  • 2 onion
  • 2 tomatoes 
  • 3 green chillies 
  • 2 eggs
  • 3 tablespoon cornflour (less or add)
  • 1 tablespoon black pepper powder 
  • 1 teaspoon salt
  • 1/2 teaspoon Ajinomoto
  • 2 tablespoon chilli sauce
  • 2 tablespoon soya sauce 
  • 1 tablespoon white vinegar 
  • 2-3 cups chicken broth (yahni)
  • 3/4 cup oil

Method:

  • First, boil the chicken and prepare the chicken broth. 
  • Now cut the capsicum, onion and tomato into cubes and the green chillies into julienne.
  •  Heat oil in a pan, add onion and saute for 2 minutes. When the onion has changed colour to white, add bell pepper and sauté for 2-3 minutes.
  • Add green chillies and tomatoes, and saute for 1 minute.
  •  Add soy sauce, chilli sauce, white vinegar, and Ajinomoto for more flavour.
  • Add shredded boiled chicken. Add chicken broth (yahni),  salt and black pepper. 
  • Mix cornstarch with water to form a  paste and then add it to the chicken broth. 
  • Stir continuously while adding cornstarch.
  • When the gravy is thick, add 2 beaten eggs, wait a moment and then stir.
  •  Cook on low heat for about 1 minute and then turn off the heat.
  •  Chicken Jalfrezi is ready. Serve with white rice or fried rice.
